This is the first recipe that’s entirely my own design, based on the guidelines for English pale ale from Designing great beers. I designed it in the labour room waiting for the birth of my son, hence the name :-)

It’s a very simple, English-style pale ale, mildly bitter and nicely hopped. I love East Kent Goldings, and wanted to try to build a beer around them.

For 20 litres:

  • 2kg Pale Ale malt
  • 2kg Marris Otter
  • 250g Munich 15EBC
  • 25g Hallertau (9%) 60 mins
  • 40g East Kent Goldings 5 mins
  • 40g East Kent Goldings dry hopping in secondary fermentation
  • Safbrew S-04
